San Javier is situated at a high altitude with a unique microclimate. The surrounding cliffs entrap the clouds and lead to a frequent misty rain over the farm (talk about imagery!). Coupled with a sloping landscape, the trees receive ample moisture in well drained soil. The cool temperatures contribute the cherries maturing slowly. The total yields in the area are low, but the trees have everything they need to flourish and produce dense and flavour packed coffee. What we see as a result is a beautiful example of coffee expressing its terroir.

In recent years, Javier has been planting more Caturra trees to improve the flavour profile of his coffees (sweeter, more focused acidity, less intense cup and better flavour clarity). However, these trees are more susceptible to disease and special attention must be paid in order to maintain the health of the trees on his farm.

A man of many talents, Javier is an engineer by trade and maintains his farm as a retreat from city life and as a way to stay connected with his rural roots. Apex has been purchasing Javier’s entire crop since 2016. When they agreed to the price of 1.4 million per 125kg of parchment coffee for all of Javier’s coffees, the commercial price set for coffee in the area by the FNC (the Federación Nacional de Cafeteros in Colombia) was 760,000 per carga. Apex increases the total payment to Javier each season with the ultimate goal being to get his payments to COP 2 million per carga.
